A committed farm to table restaurant, the Mayan Café sources its meat exclusively from local farms and uses as much sustainably-grown local produce and cheese as is seasonally available.
We use exclusively biodegradable, compostable take-out containers, paper towels, toilet paper & cleaning supplies. We were the first restaurant in Louisville to use the entire line of Ecosteward’s green supplies. We recycle all the cardboard, glass, plastic & aluminum used in the restaurant. Our used cooking oil is donated to Good Oil Boys who upgrade diesel engines vehicles to run on recycled vegetable oil.
